Pig trotters - recipe from Mallorca

Ingredients:

8 pork trotters sliced in several pieces

1 onion

1 tomato

1/2 red pepper

3 carrots

3 peeled garlic

2 laurel leaves

Aromatic herbs (fennel, marjoram, etc.)

1/2 hot pepper

Toasted almonds

Fried bread

Potatoes

Oil, salt and pepper

 

Elaboration:

The first thing we will do is wash the pig's trotters and strain. Place ingredients (onion, tomato, pepper, carrot, peeled garlic, herbs, chilli, laurel, a drizzle of oil, salt and pepper) in a large pot covered with water and cook three hours. If you have a pressure cooker, cook it about an hour.

Put the pig's trotters in a clay pot with a part of the cooking broth. Grind all the vegetables (along with some broth) and add the sauce to the meat, cooking everything together for a few minutes. Add the almonds and fried into the pan. We can fried potato chip to finish the dish.
