1 medium onion
3 ramellet tomatoes
1 tablespoon milk
6 medium potatoes
1 bay leaf
Boil the eggs. Let them cool; peel them and cut them in half lengthwise. Remove the yolks.
Chop the onion and the tomatoes. Peel the potatoes and cut them. Soak them in water. Add a “greixonera” to the fire with oil and fry the onion.
When the onion is soft, add the tomato. Add salt and pepper. Add boiling water to cook the potatoes, herbs and salt. Fry the potatoes and cook them in the sauce until they are tender.
Meanwhile, chop the garlic and parsley in the mortar. Add the egg yolks and a spoonful of milk. Mix it well. Fill the halves of the eggs with this mixture. Flour them and fry them on both sides.
When the potatoes are cooked, check the salt and rectify if necessary. Compose the eggs on top. Boil it for two or three minutes and serve it.
