Spring has started and the change in the calendar is reflected more and more visibly in the garden. Winter fruits are left behind and juicy spring fruits begin to proliferate. In vegetables there is more continuity, but some also say goodbye, such as turnip greens or thistle, and others arrive like the queen, the green bean.
As for fruits, we find the optimal season: strawberry, lemon, loquat, mango, orange, papaya, pineapple, banana. In good season: avocado, plum, date, kiwi, apple, pear, grapefruit.
In the Vegetables, sorrel, chicory, young garlic, artichoke, watercress, broccoli, onion, cabbage, cauliflower, asparagus, pea, young bean, snow peas, green bean, leek, radish, beet, carrot. In good season: chard, celery, zucchini, mushroom, endive, spinach, lettuce, new potato, cucumber.
The outstanding fish are: sea bream, anchovy, mackerel, scorpionfish, bluefin tuna, maragota, sole and hake. As for seafood, we find mussels, razor clams and fine clams.
And we cannot forget the flowers that brighten our homes ... spring is here and with it a great variety of flowers for your bouquets. Highlight Allium, Eremerus, Wax flower, Agapanthus or African lily, Lisianthus, Alelhi or Mathiola and Papaver or poppy.
It is also a good month to start having tigernuts to make your own horchata; The tigernuts are collected in November, washed and left to dry in chambers or "cambras" for several months.
